Kicked Up Bacon Cheese Mashed Potatoes
Ingredients
- 4 x baking potatoes like russets - (abt 3 lbs) peeled, and cut into 1" pcs
- 1 3/4 tsp salt
- 1/2 c. heavy cream
- 4 Tbsp. butter
- 1/4 tsp freshly-grnd black pepper
- 8 slc bacon cooked crisp, and crumbled
- 1/2 lb sharp cheddar grated
- 1/4 c. lowfat sour cream
- 1/4 c. minced fresh chives Freshly-grnd black pepper to taste
Directions
- Place the potatoes and 1 tsp. salt in a heavy 4-qt saucepan and cover with water by 1-inch. Bring to a boil. Reduce the heat to a simmer and cook till the potatoes are fork tender, about 20 min. Drain in a colander and return to the cooking pot.
- Add in the cream, butter, remaining 3/4 tsp. salt, and black pepper. Place the pan over medium low heat and mash with a potato masher to incorporate the ingredients and achieve a light texture, about 4 to 5 min. Add in the bacon, grated cheese, lowfat sour cream, and minced chives and stir till thoroughly combined. Season, to taste.
- Serve immediately.
- This recipe yields 4 to 6 servings.
