  • Key Lime Cake Elizabeth Hay

    Ingredients

    • 1 x 19 oz lemon supreme cake mix
    • 1 x 3.4 oz lemon instant pudding mix
    • 4 x Large eggs
    • 1/2 c. water
    • 1/2 c. key lime juice
    • 1/2 c. vegetable oil
    • 2 c. powdered sugar
    • 1/4 c. key lime juice

    Directions

    1. Combine above ingredients, beat two min. Pour batter into greased and floured bundt or possibly tube pan. Bake 350 degrees for 50-60 min or possibly till toothpick inserted in center comes out clean. Let cake cold in pan on wire rack.
    2. Frosting: Combine powdered sugar and key lime juice. Drizzle over cake. garnish with mint leaves.
