Kenyan Chicken Stew With Ugali

Ingredients

  • 1 lb Chicken pcs cut very small
  • 1 x Onion, minced
  • 1 x Carrot, minced Couple of large tomatoes
  • 1/2 lb Spring cabbage
  • 1 Tbsp. Mixed spice and gravy browning.
  • 1 lb Maize flour

Directions

  1. Fry the chicken pcs with minced onion and a Tbsp. of gravy browning. Simmer for 15 min with a pint of water. Then add in the minced cabbage, the carrot and the mixed spice.
  2. Simmer ten more min and add in the tomato. The meat is now ready.
  3. For the Ugali, boil a pint of water and pour in the maize flour. Stir as it cooks into a stiff cake. Serve into portions and pour the chicken over.
