    This is my favourite rice recipe. It is flavoured with chicken stock, bacon, bacon fat, leeks and onions. Full of flavour. Delicious!

    Ingredients

    • 2 cups (480 ml) rice of your choice (I use basmati or Uncle Ben's) .
    • 4 cups of chicken stock (instead of plain water)
    • 4 slices of cooked bacon (cut-up) and it's bacon fat.
    • 2 pieces of cooked chicken or ham or any leftover cooked meat.
    • 1/4 cup green olives stuffed with red pimiento (leave whole or cut in half)
    • 1 small or 1/2 medium white onion (finely diced)
    • 1 small sweet red pepper (finely diced) or 1/2 small hot red pepper (finely diced) if you like your rice spicy
    • 1 leek, cleaned, finely chopped (optional)
    • 1 or 2 green onions, finely chopped
    • Salt and pepper to taste

    Directions

    1. Cook the bacon until brown and crisp, reserve the fat. Cut-up the onions, olives, pepper, leek, bacon, chicken or other leftover meat. Place chopped ingredients in a heavy pot with a cover or a rice cooker. Season to taste with salt and pepper. Add 2 cups of rice and 4 cups of chicken stock and cook according to package directions usually about 20 to 25 minutes or so. When rice is cooked, let it sit 5 minutes without lifting the cover. Lift the cover and gently mix the cooked rice from bottom to the top to mix all the ingrédients well. Serve as a side dish with fish, chicken or meat of your choice. Can also be served alone as a meal. Enjoy!
