Katies Chicken Durango Recipe
A spicy, delicious and easy recipe that I came up with after having a similar meal at a local restaurant. Takes very little time to prepare and according to my kids is real "go for " food.

Directions
- Rinse rice to remove starch and place in rice steamer
- Add 2 cans diced tomatoes and green chilies (Add water as needed) (Takes 20-30 minutes cooking time)
- In Sauce pan - Add Alfredo sauce, milk and pepper jack cheese, stir frequently to prevent burning until cheese is melted.
- Place Coconut oil in large skillet and heat until melted.
- Add Chicken fajita slices
- Cook for 5 minutes or until chicken is tender and browning.
- Drain mushroom and add to chicken
- Pour melted Alfredo and cheese mixture over chicken
- Simmer on low until rice is ready
- Serve rice and chicken mixture alone or with warm flour tortillas
