Katies Chicken Durango

A spicy, delicious and easy recipe that I came up with after having a similar meal at a local restaurant. Takes very little time to prepare and according to my kids is real "go for " food.

Ingredients

  • 1 lb. chicken breast sliced in 1/2in strips or
  • John Souls Foods Chicken Fajitas
  • 1- 4oz can mushrooms and stems
  • 1 jar Classico 4 cheese Alfredo Sauce
  • 1/2 jar milk
  • 4 cups shredded pepper jack cheese
  • 1 cup rice (uncooked)
  • 2 cans Ro Tel diced tomatoes and green chilies (mild)
  • 8-10 flour tortillas
  • 1 tbsp. Coconut Oil
  • 1/4 to 1/2 cup water as needed while cooking rice

Directions

  1. Rinse rice to remove starch and place in rice steamer
  2. Add 2 cans diced tomatoes and green chilies (Add water as needed) (Takes 20-30 minutes cooking time)
  3. In Sauce pan - Add Alfredo sauce, milk and pepper jack cheese, stir frequently to prevent burning until cheese is melted.
  4. Place Coconut oil in large skillet and heat until melted.
  5. Add Chicken fajita slices
  6. Cook for 5 minutes or until chicken is tender and browning.
  7. Drain mushroom and add to chicken
  8. Pour melted Alfredo and cheese mixture over chicken
  9. Simmer on low until rice is ready
  10. Serve rice and chicken mixture alone or with warm flour tortillas
