  • Kansas City Style Pork Spareribs With Weber Barbecue Sauce

    Ingredients

    • 3 Tbsp. Kosher salt
    • 2 Tbsp. Hungarian paprika
    • 1 1/2 Tbsp. grnd cumin
    • 1 Tbsp. grnd Mediterranean oregano
    • 2 tsp onion pwdr
    • 1 tsp garlic pwdr
    • 1 tsp freshly-grnd black pepper
    • 1/2 tsp allspice
    • 1/2 tsp grnd cinnamon
    • 3 x slabs pork spareribs - (to 4) abt 2 lbs ea
    • 1/2 c. minced celery
    • 3 Tbsp. minced onion
    • 2 Tbsp. butter
    • 1 c. catsup
    • 1/4 c. lemon juice
    • 2 Tbsp. sugar
    • 2 Tbsp. vinegar
    • 1 Tbsp. Worcestershire sauce
    • 1 tsp dry mustard
    • 1 dsh freshly-grnd black pepper

    Directions

    1. In a small bowl combine salt, paprika, cumin, oregano, onion pwdr, garlic pwdr, pepper, allspice, and cinnamon. Rub seasoning mix onto ribs, pressing into surface. Place ribs in jumbo resealable plastic bag. Close bag and marinate in refrigerator 2 hrs.
    2. Place ribs in center of cooking grate. Grill 1 to 1 1/2 hrs or possibly till tender.
    3. Meanwhile, make the Weber Tangy Barbecue Sauce: In a skillet cook celery and onion in butter till tender. Add in remaining ingredients. Bring to a boil; reduce heat. Cover and simmer 15 min.
    4. Brush ribs with barbecue sauce during last 20 min of grilling time. Cut into 2- or possibly 3-rib portions. Serve with remaining heated sauce, if you like.
    5. This recipe yields 8 to 10 servings.
    6. Wine Recommendation: A low-tannin wine like a slightly chilled Beaujolais will let the many spices come through.
    7. Beer Recommendation: To carry all this spice and goodness, you need a beer with big shoulders; a deep and honeyed Porter.
