  • Kansas City Steak Salad 7 Points

    Ingredients

    • 1 tsp lemon pepper
    • 1/4 tsp freshly grnd pepper
    • 1 x Kansas City strip steak (16 ounce.) AKA New York strip Delmonico or possibly shell steak
    • 1 pkt mixed greens (8 ounce.)
    • 1/4 lb green beans halved and steamed
    • 4 x radishes thinly sliced
    • 1 can artichoke hearts (10 ounce.) rinsed and liquid removed
    • 1/4 c. light mayonnaise
    • 1 Tbsp. red wine vinegar
    • 1 tsp worcestershire sauce
    • 1 tsp dijon mustard
    • 1 tsp anchovy paste
    • 2 tsp snipped fresh chives

    Directions

    1. Mix together the lemon pepper and grnd pepper in a small bowl; rub the mix all over the steak and let stand 15 min.
    2. Heat a heavy skillet over meidum heat. Add in the steak and sear till done to taste, about 6 min on each side for medium rare. Transfer to a cutting board and let stand 5 min before slicing thinly.
    3. Meanwhile, combine the greens, beans, radishes and artichoke hearts in a large mixing bowl. Combine the mayonnaise, vinegar, worcestershire, mustard, anchovy paste and chives in a small bowl. Pour all but 2 tbsp of the dressing over the salad and toss to coat.
    4. Divide the salad among 4 dinner plates, proportionately divide the steak slices on top and spoon about 1/2 tbsp of the reserved dressing over each.
