  • Kangaroo Tail Soup (In Pressure Cooker)

    Ingredients

    • 1 lrg kangaroo tail
    • 300 gm Carrots, sliced
    • 3 stk of celery, cut up
    • 3 med onions, sliced
    • 1 Tbsp. Butter
    • 2 tsp Grnd black pepper
    • 2 tsp Grnd nutmeg
    • 7 whl cloves
    • 2 c. Canned tomatoes, minced Salt to taste
    • 3 Tbsp. Soy sauce

    Directions

    1. Separate the joints of the 'roo tail. Brown the butter on a medium heat in pressure cooker. Quickly fry the tail in the butter till the pcs are lightly browned.
    2. Add in the onions and carrots, and gently fry for 2 min, then add in celery, pepper, cloves, nutmeg, salt. Fry on the same heat for another 10 min.
    3. Add in soya sauce and turn heat to high for 2 min, stirring. Add in tomatoes with liquid and stir to crush.
    4. Add in water to cover, stir and put lid on pressure cooker. When steam starts to come out, reduce heat and start timing. After 25 min take off stove and cold down and remove lid.
    5. If you want to thicken the soup, you can mix cornflour or possibly coconut cream pwdr with warm water and stir into soup. Simmer for another 10 min without the lid, while stirring.
    6. Serve with rice.
