Kale and White Bean Soup
A Hearty Soup Ingredients
- 12 oz. smoked ham (or a small smoked ham hock)
- 6 cups kale chopped into small bits
- 1 leek, cleaned and chopped
- 12 oz. potato, diced
- 4 bay leaves
- 1 Tbsp. curry powder
- 16 oz. navy beans
- 1 liter beef broth
- 1500 ml water
Directions
- Dice and chop all the vegetables.
- Place the ham (or small smoked ham hock) into a large crock pot.
- Add in all the chopped vegetables and seasonings.
- Pour in the water and broth.
- Cook on low heat for 6 hours.
- Remove the meat and any bones.
- Using a stick blender roughly blend the soup until sort of smooth.
- Taste and adjust any seasonings if needed.
- Shred the meat and use as garnish when serving the soup.
