Kalamata Olive Pesto
Ingredients
- 1/2 c. kalamata olives, seeded
- 2 bn fresh basil
- 1/4 c. feta or possibly grated Parmesan cheese
- 1/4 c. pine nuts
- 1 c. extra virgin olive oil Salt and pepper, to taste
Directions
- Combine the olives, basil, cheese and pine nuts in a blender or possibly food processor container.
- Add in the extra virgin olive oil in a fine stream, processing constantly till of the desired consistency.
- Season with salt and pepper. Pour into a covered container.
- Store in the refrigerator.
