Ingredients

  • 5 lbs Boneless beef short rib, sliced thinly and cut into pcs 6 inches long and 5 inches wide
  • 8 pcs Romaine lettuce leaves
  • 1/2 cup. Grated daikon
  • 2 cups. Cooked white rice
  • 1 pc Asian pear, finely grated
  • 1/2 lrg Onion, finely grated
  • 1/2 cup. Soy sauce
  • 2 Tbsp. Plus 2 tsp. mirin, (sweetened rice wine)
  • 2 Tbsp. Plus 2 tsp. sake
  • 2 Tbsp. Plus 2 tsp. oyster sauce
  • 2 Tbsp. Plus 2 tsp. honey
  • 1/4 cup. Sesame oil
  • 1 Tbsp. Chopped garlic, (or possibly to taste)
  • 2 Tbsp. Plus 2 tsp. white sugar
  • 1/4 tsp Black pepper
  • 1/2 cup Japanese light miso
  • 1/2 cup Korean dark miso
  • 1/4 cup Red chili paste
  • 1 Tbsp. Chopped garlic
  • 1 Tbsp. Vegetable oil
  • 1 Tbsp. Sugar

Directions

  1. Mix all the ingredients together till a nice paste is formed. Set aside.
  2. Mix all marinade ingredients together with 1 cup water till smooth.
  3. Add in the beef and marinate for 4 hrs, periodically massaging the meat.
  4. Prepare the charcoal grill. When the coals are glowing, place the strips of meat on the grill and cook to taste.
  5. Place the grilled meat on a Romaine lettuce leaf with rice, miso paste and grated daikon.
  6. Roll up the lettuce leaf, making sure the ends are secure, and eat like a wrap.
