    this is very good! My sister got the recipe from a friend and then rearranged it with different ingredients and it was great!!

    Ingredients

    • 2 lb. ground beef
    • 1/2 c. chopped onion
    • salt/pepper to taste
    • 1 can chopped olives
    • 1 lg can red enchilada sauce
    • 1 can red kidney beans or your choice
    • 1.5 tsp chili powder
    • 1 tsp cumin
    • 10 corn tortillas
    • 1.5 c. grated cheese (cheddar/Monterey)

    Directions

    1. brown beef with onion, and drain
    2. mix meat with olives, sauce, spices, and beans
    3. add salt/pepper
    4. grease casserole dish
    5. place 1 layer of tortillas in bottom
    6. next layer is meat sauce
    7. grated cheese
    8. then layer the same way again
    9. and top with cheese
    10. before cooking, pour 1/4 c. water over top of casserole
    11. Bake at 350-400 for 45 min. to 65 min.
    12. IMPORTANT****
    13. If making ahead to time, don't add water till baking time
