this is very good! My sister got the recipe from a friend and then rearranged it with different ingredients and it was great!! Ingredients
- 2 lb. ground beef
- 1/2 c. chopped onion
- salt/pepper to taste
- 1 can chopped olives
- 1 lg can red enchilada sauce
- 1 can red kidney beans or your choice
- 1.5 tsp chili powder
- 1 tsp cumin
- 10 corn tortillas
- 1.5 c. grated cheese (cheddar/Monterey)
Directions
- brown beef with onion, and drain
- mix meat with olives, sauce, spices, and beans
- add salt/pepper
- grease casserole dish
- place 1 layer of tortillas in bottom
- next layer is meat sauce
- grated cheese
- then layer the same way again
- and top with cheese
- before cooking, pour 1/4 c. water over top of casserole
- Bake at 350-400 for 45 min. to 65 min.
- IMPORTANT****
- If making ahead to time, don't add water till baking time
