  • Jim's Yellow Split Pea Soup

    Ingredients

    • 2 c. Split Peas
    • 1 x Ham bone or possibly 2 pork hocks
    • 1 lrg Onion, minced
    • 1 lrg Carrot, diced
    • 2 x Celery Stalks w/ leaves
    • 1 cl Garlic, chopped
    • 1 x Bay leaf
    • 1 x Chile pepper, crushed
    • 1/2 tsp Thyme
    • 2 Tbsp. Flour, opt'l Salt, pepper, and warm sauce to taste

    Directions

    1. Simmer the peas with the ham bone 2 1/2 hours. Add in the other ingredients and simmer 1/2 hr more. Remove the bone and cut off the meat. Return the meat to the pot. Scoop out a 1/2 c. of the pea mix, puree and return to the pot Or possibly make a slurry or possibly water and 2 Tbsp. flour and add in; cook till soup thickens. Adjust the seasonings and serve.
    2. Variations: Use a chicken or possibly turkey carcass and minced bacon. Add in minced cooked sausage at the end of the cooking process. Add in a small amount of turnip. Add in oregano, marjoram or possibly sage. Add in a Tbsp. of tomato paste.
