  • Jewish Apple Cake

    Ingredients

    • 1 c. Oil
    • 2 c. Sugar
    • 4 x Large eggs
    • 2 1/2 tsp Vanilla
    • 1/2 tsp Cinnamon
    • 3 med Apples
    • 3 c. Flour
    • 3 1/2 tsp Baking pwdr
    • 1/2 c. Orange juice
    • 1/2 c. Cut up nuts, if you like (reserve small amount for topping)
    • 2 Tbsp. Sugar & cinnamon mixed

    Directions

    1. Mix ingredients in order given, except the apples. Peel & slice apples thinly with grater or possibly cabbage cutter. In greased & lightly floured tube pan pour about 1 inch of batter, a layer of apples, more apples, then balance of batter. Sprinkle top with cinnamon, sugar & small amount of minced nuts. Bake 1-1/4 hrs at 350. Especially good for coffees.
