  • Japanese Beef Stir Fry

    Ingredients

    • 12 ounce Beef flank steak, partially Frzn
    • 1 Tbsp. Peanut or possibly vegetable oil
    • 1 lrg Red bell pepper, cored, Seeded and thinly sliced, About 1 1/4 c.
    • 1 sm Onion, thinly sliced, about
    • 1 Tbsp. Minced fresh gingerroot Or possibly
    • 1 tsp Grnd ginger
    • 1 cl Garlic, crushed
    • 1/8 tsp Crushed warm red pepper
    • 12 ounce Fresh Chinese pea pods Or possibly
    • 2 pkt (6 ounce) frzn, thawed
    • 1 lrg Head escarole, about 1 lb., Coarsely minced, about 8 C.
    • 1 Tbsp. Soy sauce
    • 1/2 tsp Light brown sugar, firmly Packed

    Directions

    1. Using a sharp knife,held almost parallel to cutting surface,cut partially frzn flank steak into very thin slices.In 12" skillet over medium high heat,heat oil;add in beef;cook 2 to 3 min,stirring frequently till browned.Using slotted spoon,remove meat to plate; keep hot.To drippings in skillet,add in red bell pepper,onion,ginger, garlic and crushed red pepper.Cook about 4 min,stirring constantly till vegetables are crisp-tender.add in pea pods,escarole,soy sauce and brown sugar.Cook about 1 minute,stirring constantly till pea pods are heated through and escarole is wilted.Stir beef into vegetables.
    2. Makes 4 servings.
