James Beard's Oyster Stew
Ingredients
- 5 Tbsp. Butter
- 1 1/2 pt Oysters, with liquid
- 1 c. Lowfat milk
- 2 c. Whipping cream Salt Freshly grnd pepper Cayenne Fresh parsley, minced
Directions
- Heat soup bowls. Add in 1 large pat of butter in each bowl. Keep piping warm.
- Drain oysters. Then heat lowfat milk, cream and oyster liquor to boiling point in pan. Add in oysters and bring again to boiling point. Season to taste with salt, pepper and cayenne. Ladle into bowls. Sprinkle with minced parsley to taste.
