  • Jamaican "Curry Goat"

    Ingredients

    • 2 lb boneless veal stew meat or possibly lamb Flour
    • 2 Tbsp. salad oil
    • 1 lrg onion chopped
    • 2 x cloves garlic crushed or possibly chopped fine
    • 1 Tbsp. good fresh warm curry pwdr or possibly more to taste
    • 1/2 tsp grnd cumin
    • 1/4 tsp crushed red pepper flakes
    • 1/2 tsp grnd coriander
    • 2 c. chicken broth
    • 1 Tbsp. grated green gingerroot
    • 2 Tbsp. lime juice Salt to taste
    • 1/2 c. chopped scallions

    Directions

    1. Cube veal or possibly lamb and dust in flour. Brown in oil. As it cooks, add in each of the other ingredients in order. Slowly saute/fry till meat is tender. Serve over rice or possibly noodles. Very nice with a green salad and fresh bread and butter.
