Jamaican "Curry Goat"
Ingredients
- 2 lb boneless veal stew meat or possibly lamb Flour
- 2 Tbsp. salad oil
- 1 lrg onion chopped
- 2 x cloves garlic crushed or possibly chopped fine
- 1 Tbsp. good fresh warm curry pwdr or possibly more to taste
- 1/2 tsp grnd cumin
- 1/4 tsp crushed red pepper flakes
- 1/2 tsp grnd coriander
- 2 c. chicken broth
- 1 Tbsp. grated green gingerroot
- 2 Tbsp. lime juice Salt to taste
- 1/2 c. chopped scallions
Directions
- Cube veal or possibly lamb and dust in flour. Brown in oil. As it cooks, add in each of the other ingredients in order. Slowly saute/fry till meat is tender. Serve over rice or possibly noodles. Very nice with a green salad and fresh bread and butter.
