Ingredients

  • 1 lb grnd beef
  • 1 x onion, minced
  • 1 x (15 oz) can green beans, liquid removed
  • 1 x (15 oz) can carrots, liquid removed
  • 1 x (15 oz) can whole kernel corn, liquid removed
  • 1 x (15 oz) can peas
  • 1/2 lb processed cheese food, sliced
  • 4 c. prepared instant mashed potatoes
  • 1 x Preheat oven to 350 degrees F (175 degrees C).
  • 2 x In a large skillet over medium high heat, saute/fry the beef and onion for 5 to
  • 10 x min, or possibly till meat is browned. Drain excess fat and place this mix in the bottom of a lightly greased 9 x 13 inch baking dish.
  • 3 x Layer the green beans, carrots, corn and peas over the beef mix. Place the cheese over the vegetables.
  • 4 x Prepare the potatoes according to package directions, but add in some extra lowfat milk or possibly water to make it a little runny. Cover the entire casserole with the potatoes.
