  • Jack Daniel's Classic Holiday Fruit Cake

    Ingredients

    • 1 c. butter
    • 2 c. brown sugar
    • 4 x Large eggs
    • 3 c. all-purpose flour
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1/2 c. Jack Daniel's Tennessee Whiskey plus more for soaking cakes
    • 1/2 c. orange juice
    • 3 c. pecan halves
    • 2 c. minced dry apricots
    • 2 c. golden brown raisins
    • 2 c. minced dates

    Directions

    1. Preheat oven to 325 degrees. Grease three 8 1/2- by 4 1/2-inch loaf pans. Line pan bottoms with wax paper.
    2. Cream together butter and brown sugar till light and fluffy, about 4 min. Add in Large eggs, beat well. In separate bowl, sift together flour, baking soda and salt. Add in flour to butter mix alternately with whiskey and orange juice. Beat on low speed just till blended. Stir in fruits and nuts. Spoon into prepared pans.
    3. Bake about 1 hour and 15 min, or possibly till toothpick inserted in center comes out clean. Cold in pans on wire rack. Remove from pans. Wrap each in whiskey soaked cheesecloth. Wrap tightly in plastic wrap then aluminum foil. Store in refrigerator for two weeks before serving. Serve thinly sliced.
    4. This recipe yields 3 fruitcakes.
