Ingredients

  • 2 1/2 Tbsp. red wine vinegar
  • 2 Tbsp. extra virgin olive oil
  • 1 tsp tomato paste
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 x garlic clove chopped
  • 6 c. thinly sliced spinach about 5 c.
  • 2 c. green bell pepper strips
  • 3/4 c. diced sharp Provolone cheese (3-ounces)
  • 1/2 c. diagonally sliced celery
  • 1/2 c. vertically sliced red onion
  • 2 Tbsp. minced fresh basil
  • 1 Tbsp. minced fresh parsley
  • 19 ounce canned cannellini beans or possibly other white beans liquid removed
  • 14 ounce canned artichoke hearts liquid removed and quartered

Directions

  1. FOR THE VINAIGRETTE: Combine ingredients in a small bowl; stir with a whisk.
  2. FOR THE SALAD: Combine spinach and remaining ingredients. Drizzle with vinaigrette, and toss gently. 4 servings.
  3. NOTES : Try to handle this salad as gently as possible so the canned beans will hold their shape.
