Italian Tofu And Spinach Patties

Ingredients

  • 1 lb soft tofu, crumbled
  • 1 pkt (10 ounces) prewashed, ready-to-eat spinach
  • 1 c. grated smoked mozzarella cheese
  • 1/4 c. freshly grated Parmesan cheese
  • 2 x garlic cloves, chopped
  • 1 tsp salt
  • 1/4 tsp freshly grnd black pepper
  • 1/4 tsp grnd nutmeg
  • 2 c. dry bread crumbs
  • 3 Tbsp. extra virgin olive oil
  • 2 c. tomato sauce

Directions

  1. In a large bowl, mix tofu, spinach, cheeses, garlic, salt, pepper and nutmeg.
  2. Shape mix into 8 equal-size patties. Dip each patty in bread crumbs.
  3. In a medium skillet, heat extra virgin olive oil over medium heat. Cook patties till golden brown, 3 to 4 min per side. Serve in pool of tomato sauce.
