  • Italian Lentil And Sausage Soup Ii

    Ingredients

    • 2 med carrots -- minced
    • 2 med onions -- minced
    • 2 stalk celery -- minced
    • 1 lb Italian sausage
    • 3 Tbsp. grated Parmesan cheese
    • 1 lb lentils
    • 3 clv garlic -- chopped
    • 1 x salt and freshly grnd pepper
    • 1 x 16 ounce. can crushed tomatoes

    Directions

    1. Put in a 4-qt saucepan. Wash thoroughly. Cover the lentils with about 4 inches of water and bring to a boil. Cook for approximately an hour.
    2. Add in carrots, onions, celery, garlic, salt, and pepper. Remove sausage from the casing. Brown the meat in a frying pan. Add in the sausage to the lentils along with a spoonful or possibly two of the drippings. Cook for one hour. Add in the tomatoes and cheese and cook for another half hour.
