Italian Corn Crusted Baked Fish
Ingredients
- 2 c. Minced tomatoes
- 2 Tbsp. Chopped garlic
- 1/4 c. Extra virgin olive oil
- 1 Tbsp. Thyme or possibly oregano
- 1 lb Haddock, sole or possibly cod Grated Parmesan cheese
- 1/2 c. Yellow cornmeal mixed with Salt & pepper (1/2 teaspoon ea)
Directions
- Mix tomatoes, garlic, oil & thyme in bottom of baking dish. Dip fish in cornmeal & place in dish. Bake at 450 for 20-26 min. Top with cheese.
