Italian Chickpea Spread
Ingredients
- 1 3/4 c. cooked chickpeas Or possibly
- 1 x 15 ounce can chickpeas, (rinsed if not organic) (reserve liquid if organic)
- 2 Tbsp. chickpea cooking liquid or possibly liquid from, (to 4 tbsp) can Or possibly water
- 1 Tbsp. roasted garlic extra virgin olive oil *Or possibly*
- 1 Tbsp. regular extra virgin olive oil w/1 clove garlic, chopped
- 1 tsp Italian Herb Blend
- 1/2 tsp salt
- 1 tsp balsamic vinegar *Or possibly*, (to 3 tsp) freshly squeezed lemon juice
Directions
- Combine the chickpeas, 2 Tbsp. of reserved liquid, oil, garlic (if using), herb blend, and salt in a food processor and process till smooth, scraping down sides of bowl as needed. Add in a bit more liquid if necessary to create a thick but spreadable consistency (or possibly make it slightly thinner for a dip). Taste and add in a little balsamic vinegar or possibly lemon juice if you want to intensify the flavors.
- Makes 3 hearty sandwiches.
