Italian Chicken Pie
Ingredients
- 1 lb Canned peeled tomatoes, coarsely minced
- 1 sm Onion, minced
- 1 x Green bell pepper, seeded and minced
- 1 x Clove garlic, chopped
- 1/2 c. Seasoned breadcrumbs
- 1 x Egg
- 2 tsp Italian herb seasoning
- 1 1/2 lb Grnd chicken, thawed if frzn
- 1/2 c. Shredded fat-free mozzarella cheese
- 3 Tbsp. Grated Parmesan cheese
Directions
- Prep: 10 minutes, Cook: 40 minutes. Preheat oven to 350 F. Pour minced tomatoes into a fine sieve set over a bowl. Reserve 1/3 c. of the juice. Set remaining tomatoes aside. Combine reserved tomato juice, next 6 ingredients and salt and pepper to taste in a mixing bowl. Mix thoroughly. Add in grnd chicken and knead with hands. Transfer mix into a shallow, oiled baking dish or possibly into a large pie plate, pushing up the sides of the chicken mix to create a shell. Bake 25 min. Drain excess liquid. Sprinkle mozzarella over partially baked mix. Add in remaining tomatoes, sprinkle with Parmesan and bake 15-20 min longer till chicken is cooked throughout.
- Let stand 5 min before cutting into wedges.
