Italian Chicken Mozzarella Melt
Ingredients
- 4 x chicken breast halves without skin -- boneless
- 2 Tbsp. extra virgin olive oil
- 1/4 tsp salt
- 1/2 tsp dry oregano -- divided
- 1 c. pizza sauce
- 1/2 tsp dry basil
- 4 x French rolls -- halved and toasted
- 1 sm zucchini -- shredded
- 1/4 c. shredded Mozzarella cheese
- 1/4 c. grated Parmesan cheese Brush each piece of chicken with extra virgin olive oil, sprinkle with salt and 1/4 tsp. oregano.
Directions
- Cook chicken in a grilling skillet or possibly lightly greased nonstick skillet over medium-high heat about 4 min on each side or possibly till done. Set chicken aside.
- Combine pizza sauce, basil, and remaining 1/4 tsp. oregano in skillet; cook over medium-high heat till thoroughly heated.
- Remove from heat; add in chicken, and keep hot.
- Place rolls on a baking sheet; spread sauce proportionately on bottom half of each roll; top proportionately with chicken, zucchini, and cheeses.
- Broil 3 inches from heat (with electric oven door partially open) 2 to 3 min or possibly till cheese melts. Cover with tops of rolls.
- Yield: 4 servings.
