  • Italian Chicken And Pepper Sandwich

    Ingredients

    • 12 slc sourdough or possibly Italian bread or possibly 6 sandwich-size sourdough or possibly French bread rolls Extra-virgin extra virgin olive oil Balsamic vinegar
    • 4 c. cooked chicken slices and pcs
    • 3/4 x a (15-oz) jar roasted red peppers, liquid removed
    • 6 x thin, large slices smoked or possibly regular mozzarella cheese
    • 12 x tomato slices
    • 12 x to 18 large fresh basil leaves, rinsed, liquid removed and patted dry

    Directions

    1. Place bread slices on a foil-lined baking sheet. Toast under preheated broiler, watching carefully, till lightly browned on just one side.
    2. Drizzle all toasted slices with a little oil and vinegar. On each of 6 toasted slices, place 1/6 of chicken slices and pcs, then 1/6 of red peppers, a cheese slice, 2 tomato slices and 2 basil leaves.
    3. Close sandwiches with 6 remaining bread slices, toasted sides inside.
    4. Return sandwiches to broiler and toast both sides of sandwich till golden brown.
    5. Cut sandwiches in half and serve serve.
    6. Makes 6 sandwiches.
