Italian Beef & Mushroom Stir-Fry with Pasta

A fast and tasty dinner for nights when dinner has to get to the table pronto. Start with beef stir fry from the market and save having to partially freeze and slice a beef steak. Packaged fresh sliced mushrooms and grape tomatoes are a market convenience too.

Ingredients

  • 8-ounces medium bow-tie or shell pasta uncooked
  • 2 tablespoons olive oil
  • 3/4 to 1 pound beef for stir fry, cut into strips 2 to 3 inches long
  • 4 cloves garlic, crushed
  • 8 ounces sliced fresh mushrooms
  • Salt and fresh ground black pepper to taste
  • 1 cup cherry or grape tomato halves, or 2 medium tomatoes sliced in thin wedges
  • 1/4 cup zesty Italian salad dressing
  • 2 tablespoons fresh parsley, minced
  • 2 tablespoons fresh grated Parmesan cheese

Directions

  1. Cook pasta according to directions; drain and keep warm.
  2. Meanwhile, heat oil in large nonstick skillet over medium-high heat.
  3. Place half of beef strips in skillet and stir fry 1 minute or until outside surface is no longer pink; do not overcook. Remove to warm platter; cover lightly with foil.
  4. Stir fry remaining beef strips with garlic in same skillet and add to first batch on platter. Season with salt and fresh ground black pepper to taste; recover to keep warm.
  5. In same skillet stir fry mushrooms 2 minutes. Add tomatoes, Italian dressing and stir fried beef. Heat through 1 or 2 minutes.
  6. Spoon beef mixture over hot pasta. Sprinkle with parsley and cheese.
