  • Italian Artichoke Pie

    Ingredients

    • 3 x Large eggs, Beaten
    • 1 x 3 Ounce Package Cream Cheese With Chives, Softened
    • 3/4 tsp Garlic Pwdr
    • 1/4 tsp Pepper
    • 1 1/2 c. Mozzarella Cheese, Part Skim Lowfat milk, Shredded
    • 1 c. Ricotta Cheese
    • 1/2 c. Mayonnaise
    • 1 x 14 Ounce Can Artichoke Hearts, Liquid removed
    • 1/2 x 15 Ounce Can Garbanzo Beans, Canned, Rinsed And Liquid removed
    • 1 x 2 1/4 Ounce Can Sliced Olives, Liquid removed
    • 1 x 2 Ounce Jar Pimientos, Diced And Liquid removed
    • 2 Tbsp. Parsley, Snipped
    • 1 x Pie Crust (9 Inch), Unbaked
    • 2 sm Tomato, Sliced

    Directions

    1. In a large mixing bowl stir together Large eggs, cream cheese, garlic pwdr, and pepper. Add in 1 C. of the mozzarella chesse, ricotta chesse, and mayomnaise.
    2. Stir till throughly combined.
    3. Ouarter 2 artichoke hearts; set aside. Chop remaining hearts. Fold minced hearts, garbanzo beans, olives, pimentoes, and parsley into the cheese mix. Pour into pastry shell.
    4. Bake in a 350 degree oven for 30 min. Top with the remaining mozzarella cheese and Parmesan cheese. Bake about 15 min more or possibly till set. Let stand for 10 min. Arrange tomatoe slices and quarted artichoke hearts over the top. Cut into wedges.
    5. Makes 8 servings.
    6. NOTES : Not only does this make a super supper dish, it's also great for a late-morning brunch.
