Italian Antipasto Platter
Ingredients
- 100 gm lettuce, mixed
- 1 x tomatoes
- 200 gm sardines, tinned
- 4 x artichoke hearts
- 4 slc mortadella
- 12 x olives, black
- 4 slc ham
- 4 slc salami
- 2 x Large eggs
- 2 tsp parsley, minced
- 1 Tbsp. capers
- 1/2 c. extra virgin olive oil
- 2 x anchovy fillets
- 1/4 c. lemon juice salt, pepper
Directions
- Hard boil Large eggs, ten min.
- Cut tomatoes into wedges.
- Line a large plate with lettuce leaves.
- Decoratively arrange ingredients around the plate in colourful groups. Sprinkle with capers and finely minced parsley.
- Combine dressing ingredients and mix well.
- Drizzle over dressing and serve immediately.
- Quick, easy and colourful.
