  • Island Style Rice And Beans

    Ingredients

    • 2 tsp extra virgin olive oil
    • 1 sm yellow onion minced
    • 1 sm green bell pepper minced
    • 2 x cloves garlic chopped
    • 1 c. long grain white rice
    • 1 tsp grnd cumin
    • 2 c. cooked black beans or possibly 1 can (15z) black beans rinsed and liquid removed
    • 1 can whole tomatoes (16oz) undrained
    • 3/4 c. water
    • 1/4 tsp warm pepper sauce

    Directions

    1. Preheat oven to 350. In a lg. nonstick skillet, heat oil over medium heat.
    2. Add in onion, bell pepper, and garlic; saute/fry till golden brown, about 10 min.
    3. Add in rice and cumin; cook, stirring, for 1 minute. Stir in beans, tomatoes with liquid, water and warm pepper sauce; break up the tomatoes with a spoon. Increase the heat to HIGH and bring to a boil. Transfer rice mix to a lg. baking dish. Cover and bake till liquid is absorbed and rice is tender, about 25 min. Remove dish from oven. Place in a serving dish and serve.
    4. NOTES : YeeeeUmmmmm! This is TNT...family, especially husband, loved it.
