    Here is a super easy recipe for Irish soda bread. This recipe was adapted from a recipe printed in The News and Observer, a newspaper in Raleigh, NC. This Irish soda bread recipe is truly great any time of the year!

    Ingredients

    • Irish Soda Bread
    • 4 cups flour
    • 1 tbsp baking soda
    • 1 cup sugar
    • 1 tsp salt
    • 6 tbsp butter, cut into cubes
    • 1 cup raisins
    • 1 3/4 cup buttermilk
    • Sugar topping
    • 1/3 cup sugar
    • 2 tbsp water

    Directions

    1. Preheat oven to 400*.
    2. Line a cookie sheet with no-stick foil.
    3. In a bowl, whisk together flour, baking soda, sugar and salt.
    4. Add butter and combine with hands until crumbly.
    5. Add raisins and mix.
    6. Add buttermilk. Mix until combined.
    7. Empty dough onto a floured surface. Press into a ball.
    8. Divide in half. Shape each half into rounds.
    9. With a knife, score the tops of each round in the shape of a cross.
    10. Bake 25-35 minutes. Until cooked in the center.
    11. Prepare sugar topping:
    12. In a glass measuring cup add sugar and water.
    13. Place in microwave for about 45 seconds.
    14. Stir and add to the top of each bread with a basting brush.
    15. Eat bread within 1-2 days of making.
