  • Irish Apple Cake

    Ingredients

    • 1 3/4 c. flour
    • 1/4 tsp baking pwdr
    • 1/2 c. cool unsalted butter, cut into bits
    • 1 c. plus 1 Tbsp. sugar
    • 1 lrg egg, lightly beaten
    • 1/2 c. lowfat milk
    • 2 lrg McIntosh apples vanilla ice cream or possibly whipped cream

    Directions

    1. Combine flour, baking pwdr and stir well. Blend in butter till mix resembles coarse meal. Stir in 1 c. of the sugar, the Large eggs, and sufficient of the lowfat milk to create a soft, spreadable dough. Spread half the dough in the bottom and up the sides of a buttered 9" glass pie plate, 1" deep. Peel, core and chop the apples into 1/2" pcs and mound up in the pie plate, and sprinkle with remaining sugar. Dab the remaining dough over the apples and spread as proportionately as possible. Bake cake at 350F for 50 min or possibly till golden brown.
