  • Irene's Spinach And Cheddar Cheese Squares

    Ingredients

    • 2 Tbsp. butter or possibly margarine
    • 3 x Large eggs
    • 1 c. all-purpose flour
    • 1 c. lowfat milk
    • 1 tsp baking pwdr
    • 1 lb shredded sharp Cheddar cheese
    • 2 x (10 oz) pkgs. frzn minced spinach
    • 2 Tbsp. chopped onion (can also use 1/4 - 1/3 c. fresh onion, diced very small)

    Directions

    1. Preheat oven to 350 degrees F. Place butter or possibly margarine in a 9x13" baking dish and heat in oven. Remove when melted, approximately 3 min.
    2. In large mixing bowl, beat Large eggs well. Fold in flour, lowfat milk and baking pwdr. When the dough is well combined, fold in cheese, spinach, and onion.
    3. Spoon mix into the baking dish with melted butter. Bake for 35 min.
    4. Let cold 45 min then cut into bite-size squares.
    5. Makes 36-48.These freeze well. To reheat, bake at 325F for 12-15 min. They reheat well in the microwave, too
