Ingredients

  • 2 c. yellow split peas
  • 8 c. water or possibly stock
  • 2 Tbsp. sunflower oil
  • 1 c. onion, diced
  • 1 1/2 Tbsp. chopped garlic
  • 1 Tbsp. fresh ginger root, chopped
  • 1 1/2 c. spinach, minced
  • 1/4 tsp grnd cumin
  • 1/4 tsp grnd coriander
  • 1/2 tsp turmeric
  • 1/8 tsp cayenne pepper
  • 1 tsp salt

Directions

  1. Wash peas. Add in to water or possibly stock in a 3-qt soup pot. Bring to a boil and cook on low heat for 45 min, half covered with a lid, stirring occasionally.
  2. Heat the oil in a fry pan and saute/fry the onions, garlic, and ginger till lightly browned and tender. Add in to split peas along with all the remaining ingredients. Lower heat to simmer, cover, and continue to cook 30 min more, stirring occasionally.
