Indian Spice Cookies

Based on Garam Masala, a spice blend used frequently in Indian cuisine, these cookies have a nice soft and chewy texture and the flavor is complex and alluring with the tiniest bite on the finish that warms the mouth.

Ingredients

  • 1 cup butter (softened)
  • 1 cup brown sugar (firmly packed)
  • 1/2 cup granulated sugar
  • 2 eggs
  • 2 tsp. Vanilla
  • 2 1/4 tsp. Garam Masala
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 2 1/2 cups all-purpose flour
  • 1/2 to 1 cup chopped walnuts (optional)

Directions

  1. Preheat oven to 350° F.
  2. Cream together the butter, brown sugar and granulated sugar.
  3. Mix in two eggs and vanilla until incorporated.
  4. Mix in remaining ingredients.
  5. Fold in chopped walnuts if desired.
  6. Drop by rounded teaspoons onto cookie sheet lined with parchment or silicone mat.
  7. Bake for 10-12 minutes.
  8. Let cool on cookie sheet for 5 minutes then remove with spatula to wire rack to cool completely.
  9. Store in airtight container to retain softness.
