  • Indian Potato Cakes (Vegan)

    Ingredients

    • 2 x To 3 large potatoes
    • 1 lrg Onion, minced
    • 2 x To 3 cloves garlic, minced
    • 2 slc Bread, crusts removed, Crumbled
    • 1 x To 2 tsp mild curry pwdr
    • 1 x Salt
    • 1 x Non-stick spray

    Directions

    1. Peel potatoes, cut into cubes and boil in water till tender. Mash (may want to add in a little water to make mashing them easier).
    2. Water/broth saute/fry onions and garlic. Add in to mashed potatoes. Add in bread crumbs, curry pwdr and salt. Cold sufficient to handle.
    3. Form 10 to 12 four inch diameter patties and brown them in a non-stick pan sprayed with non-stick spray.
    4. You can also add in cooked carrots, peas, and any other soft cooked vegetables to the potato mix before browning them. Serve as is or possibly with some Indian condiments like mango chutney or possibly coriander chutney. These patties are pretty easy to make and really good.
