  • Indian Fry Bread (Hoecake)

    Ingredients

    • 3 c. all-purpose flour
    • 4 tsp baking pwdr
    • 1 tsp salt
    • 2 Tbsp. shortening
    • 1 x Sufficient cool water to make a soft, but hard dough
    • 3/4 x to 1 c. liquid

    Directions

    1. Combine flour, baking pwdr and salt. Add in shortening and cut through with knife till mix resembles coarse crumbs.
    2. Add in liquid to make a dough which is soft but not sticky. If it is too sticky, just add in a little flour, two Tbsp. at a time, and knead till mix is the right consistency.
    3. Heat sufficient fat (any type: lard, bacon fat, vegetable oil, etc.) to cover the bottom of a large skillet. Form dough into a ball, divide into 4 equal parts.
    4. Form each part into a round ball, then flatten with your hands to create a round, flat bread. Place in warm fat and fry till bottom side is golden, then turn and cook in the same manner untilthe other side is light brown and the cake has puffed.
    5. Repeat for each piece of dough till all are done. Serve with butter and/or possibly jam or possibly jelly.
    6. Makes 8 (1/2 round) servings.
