    • 2 lemons, zest, juice, and rind
    • 10 sprigs fresh mint
    • 2 cups water
    • 1 1/2 cups sugar
    • 1 gallon unsweetened ice tea

    Directions

    1. Combine the lemon rind and juice into a small bowl. Put the mint into a second bowl and bruise lightly with a pestal or the back of a wooden spoon.
    2. Bring the water and the sugar to a boil.Remove from heat and place equal amounts into each bowl. Let the mixture come to room tempeture, then strain into clean jars or bottles. Cap or cover tightly and refrigerate for up to 1 week.
    3. To prepare iced tea infusion:
    4. Fill a large glass with ice. Add 3/4 cups ice tea and a couple tablespoons of the flavored syrup. Sip & Enjoy!
    5. Note:Prepare ice tea using fresh filtered water. Seep the tea longer then you normaly would because the syrup infusions will dilute the tea.
