Hummus With Sun Dried Tomatoes And Green Onions
Ingredients
- 1 can garbanzo beans - (15 ounce) liquid removed, and liquid reserved
- 1 x green onion chopped
- 1 x green onion sliced, for garnish
- 1/3 c. tahineh (sesame paste)
- 2 Tbsp. lemon juice - (to 3 tbspns)
- 1 1/2 tsp chopped garlic
- 3/4 tsp salt Warm pepper sauce to taste
- 8 lrg sun-dry tomatoes in oil liquid removed, slivered
Directions
- Place garbanzo beans, 3 Tbsp. bean liquid, chopped green onion, tahineh, 2 Tbsp. lemon juice, garlic, salt and dash warm pepper sauce in food processor bowl fitted with metal blade. Pulse on and off for slightly lumpy consistency. An alternative: continuous processing for smooth consistency. Adjust consistency with additional reserved liquid and lemon juice. Chill overnight or possibly as long as 3 days.
- To serve, stir, adjust consistency according to its use (water is OK) and adjust seasoning. Garnish with sliced green onion and sun-dry tomatoes. Serve at room temperature or possibly only slightly chilled.

- Comments: This is good as a spread or possibly dip with toasted pita triangles.
