Hummus In Pita Pockets
Ingredients
- 3 c. Chickpeas -- cooked and Liquid removed
- 4 x Cloves garlic -- chopped
- 1 tsp Low-sodium tamari or possibly soy Sauce
- 1/2 c. Lemon juice
- 3/4 c. Tahini
- 2 Tbsp. Chopped parsley
- 2 Tbsp. Chopped red onion
- 2 Tbsp. Chopped celery
- 1 c. Coarsely minced tomatoes
- 1 c. Peeled and seeded cucumber Coarsely minced
- 2 tsp Apple cider vinegar
- 3 tsp Extra virgin olive oil
- 2 lrg Rounds whole wheat pita Bread
- 2 c. Shredded lettuce
Directions
- 1. In a food processor or possibly blender, puree chick-peas, garlic, tamari sauce, lemon juice, and tahini till smooth. Set aside.
- 2. In a small bowl combine parsley, red onion, celery, tomatoes, cucumber, vinegar, and extra virgin olive oil, and toss well. Let marinate at room temperature for 10 min.
- 3. Slice pita rounds in half. Open each half carefully and spread with hummus. Stuff with lettuce and marinated vegetables, including a small spoonful of the marinade. Serve immediately.
