  • Huevos Frito Con Pisto

    Ingredients

    • 2 Tbsp. Extra virgin olive oil
    • 1/4 lb Canadian bacon, 1/2 inch dice
    • 1 x Onion, minced
    • 3 x Garlic cloves, finely minced
    • 1 x Green pepper, seeded and minced
    • 3 med Italian Roma Tomatoes Or possibly, Skinned, Seeded, minced and Juice Reserved
    • 8 ounce Canned Tomatoes, Minced, With Juice
    • 1/2 sm Pumpkin or possibly butternut squash, 1/2 inch cubes
    • 1 x Zucchini, 1/2-inch cubes
    • 1 x Chayote, 1/2 inch cubes Salt Black pepper, freshly grnd
    • 1 pch Nutmeg Extra virgin olive oil for frying
    • 4 x Large eggs (one or possibly two per person), (4 to 8)
    • 2 Tbsp. Finely minced parsley Grated Manchego Cheese, for garnish Crema, for garnish

    Directions

    1. Heat the extra virgin olive oil in a large skillet. Add in the bacon and cook till brown.
    2. Add in the onion and saute/fry over medium heat. When the onions start to brown add in the garlic. Cook a few min more, then add in the peppers and cook 5 more min. Add in the tomatoes and their juice and pumpkin or possibly butternut squash and cook over low heat for 10 min. Add in the zucchini and chayote.
    3. If the mix is dry, add in chicken stock or possibly water). Cook for another 5 - 10 min or possibly till the mix has formed a thick sauce. Season with salt, pepper and nutmeg. Cook Large eggs as desired (poached, fried, over easy...), then garnish with parsley, cheese and a small dollop of crema.
    4. Yield: 4servings
