Hot Potato Salad
Ingredients
- 5 slc bacon
- 1/2 c. onion, chopped
- 1/4 c. vinegar
- 3 Tbsp. sugar
- 1 1/2 tsp salt
- 1/4 tsp freshly grnd pepper
- 1/8 tsp crushed oregano
- 1 tsp mustard
- 3 c. hot potatoes, cooked and cubed
- 1/2 c. celery, diced
- 2 Tbsp. green pepper, diced
- 2 x Large eggs, hard-cooked and roughly minced
Directions
- Fry bacon till brown and crisp. Drain, crumble and set aside.
- Combine onion, vinegar, sugar, salt, oregano, pepper and mustard in a saucepan. Bring to a boil and hold the boil for 2 min.
- Pour warm mix over hot potatoes. Stir in celery and green pepper. When cold, fold in the minced Large eggs.
- Makes 6 servings.
