Ingredients

  • 6 ounce bacon - (to 8 ounce) cut up
  • 1 pkt Scalloped Potatoes - (7 to 8 ounce)
  • 1/2 tsp celery seed
  • 1/4 tsp freshly-grnd black pepper
  • 1 Tbsp. sugar
  • 1 can cream of mushroom soup - reduced fat
  • 1 1/4 c. water
  • 1/2 c. evaporated lowfat milk
  • 1 Tbsp. vinegar
  • 2 Tbsp. reserved bacon drippings

Directions

  1. Fry bacon till crisp; reserve drippings. Drain bacon on paper towels and set aside.
  2. Combine contents of Scalloped Potatoes package and seasoning mix with celery seed, pepper, and sugar in the crockpot.
  3. Combine remaining ingredients in a small bowl and stir into the potato mix. Mix bacon in. Cover and cook on LOW for 4 to 5 hrs, till potatoes are tender.
  4. This recipe yields 4 servings.
