Ingredients

  • 1 c. lowfat milk
  • 3/4 c. shortening
  • 1/2 c. honey
  • 2 teaspoon salt
  • 3/4 c. hot water
  • 2 pkg. active dry yeast
  • 3 Large eggs, beaten
  • 4 1/2 c. all-purpose flour
  • 1 1/2 c. whole wheat flour
  • 1 tbsp. melted butter

Directions

  1. In small saucepan over low gas flame, heat lowfat milk till bubbles form around pan; turn off flame. Add in shortening, honey and salt, stirring till shortening is melted; cold to lukewarm.
  2. In large bowl, combine water and yeast, stirring till yeast is dissolved. Add in lowfat milk, mix and Large eggs. Combine flours. Add in 2/3 of flour mix to yeast mix; beat at low speed till blended; beat 2 min at medium speed or possibly till smooth. Stir in remaining flour mix. Mix with hand, squeezing dough between fingers 20 to 30 times.
  3. Cover, let rise till doubled. Punch down; beat with spoon till smooth. Turn into greased, deep 3-qt casserole; pat proportionately. Cover, let rise till doubled. With a sharp knife, cut a 4-inch cross 1/2 inch deep in top of dough. Bake in 375 degree gas oven 45 to 50 min. Brush with butter; serve hot. Makes 1 loaf.
