  • Honey Roasted Chunky Peanut Butter Bookies

    Ingredients

    • 1 1/2 c. all-purpose flour
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 1 c. smooth peanut butter
    • 1/2 c. butter, at room temperature
    • 1/2 c. brown sugar
    • 1/3 c. liquid honey
    • 1 x egg
    • 1 tsp vanilla
    • 1 c. coarsely minced honey-roasted peanuts

    Directions

    1. Preheat oven to 350 F. In a small bowl, using a fork, stir flour with baking soda and salt till blended. Using an electric mixer, in a large bowl, beat peanut butter with butter, brown sugar and honey till well blended. Beat in egg, scraping down side to mix well. Beat in vanilla. Gradually beat in flour mix. Stir in peanuts till proportionately distributed.
    2. Flour your hands and roll dough into 1-inch balls. Place at least 2 inches apart on ungreased baking sheets. Flour the bottom of a glass and gently press on each ball to flatten cookie slightly. Then dip the tines of a fork into flour and press gently into center of cookie 2 times to create a cross pattern.
    3. Bake in center of preheated oven till golden and just set, watching carefully near the end to prevent base from burning, about 10 min. Remove from oven and leave on baking sheet 1 minute.
    4. Then transfer to a rack to cold completely.
    5. Makes 3 dozen.
