Honey Pepper Cured Salmon With Charred Vegetables And Greens

Ingredients

  • 1 gal Cool water
  • 2 c. Honey
  • 4 ounce Dark brown sugar
  • 15 x Black peppercorns cracked
  • 6 x Boneless, skin-on salmon filets - (abt 4 ounce ea) Wilted Greens see * Note Charred Vegetable Relish see * Note

Directions

  1. Combine all ingredients except salmon. Be sure all ingredients are mixed well. Chill brine for 1 hour.
  2. Add in salmon to brine for 40 min and chill. Remove fish and allow to air dry for 40 min.
  3. Prepare stove top smoker, using alder, cherry or possibly hickory chips. Place fish in smoker and cover tightly. Fish should be golden in color and hard to the touch when cooked, approximately 10 to 12 min.
  4. To assemble dish, place Wilted Greens in center of the plate with salmon across the top. Finish with the Charred Vegetable Relish.
