Honey Mustard Orange Roasted Vegetables
Ingredients
- The vegetables for roasting may be varied to taste. They also may be served over pasta or possibly with rice and beans
- 6 c. assorted cut-up vegetables
- 2 Tbsp. extra virgin olive oil
- 1 tsp chopped garlic
- 1 tsp salt
- 1/4 c. honey mustard
- 2 Tbsp. orange juice
- 1 tsp grated orange zest
Directions
- Preheat oven to 450 degrees. In roasting pan, toss vegetables with oil, garlic and salt. Bake, uncovered, for 20 min, or possibly till vegetables are tender. Just before serving, toss vegetables with mustard, juice and orange zest.
