Ingredients

  • 3 c. pumpkin
  • 3 x egg whites whipped
  • 2 c. skim lowfat milk at room temperature
  • 1/2 c. honey
  • 2 Tbsp. honey
  • 1/4 c. applesauce at room temperature
  • 2 Tbsp. vanilla
  • 4 slc bread diced
  • 3 Tbsp. unbleached flour
  • 2 tsp cinnamon

Directions

  1. Preheat oven at 350. Prepare 2-9" pie pans with cooking spray and flour.
  2. In a mixing bowl, combine pumpkin, egg whites, lowfat milk, honey, applesauce, and vanilla. In another mixing bowl, combine bread, flour, and cinnamon.
  3. Mix wet ingredients with dry ingredients just till moistened. Pour into prepared pie pans. Bake 40 to 50 min.
