Homemade Oatmeal-Banana Pancakes
Servings: 1by ShaleeDP1124 recipes>This is one of our favorite homemade pancakes that my daughter makes every now and then. Healthy and yummy! Ingredients
- 1 cup milk (add as needed)
- 1 cup quick-cooking oats
- 2 tablespoons brown sugar (add as desired sweetness)
- 1/2 teaspoon salt
- 2 eggs
- 2 teaspoons butter, melted
- 1/2 teaspoon vanilla extract
- 2 pcs Ripe banana
- add flour and baking powder and baking soda if you want it fluffy
Directions
- Crush the banana in a mixing bowl.
- Add the milk, oats, sugar, salt, eggs, butter, vanilla altogether and mix well. (add the flour, baking powder and baking soda if using them at this point)
- Add more milk and butter as needed while mixing.
- *sometimes I like it thick and heavy without flour.
- When batter is ready, heat a shallow non-stick pan and start pouring one ladle of batter at a time.
- Cook for a few minutes until brown and then flip to cook the other side.
- Put on a plate and drizzle with your favorite syrup.
- Serve while hot.
