  • Homemade Oatmeal-Banana Pancakes

    This is one of our favorite homemade pancakes that my daughter makes every now and then. Healthy and yummy!

    Ingredients

    • 1 cup milk (add as needed)
    • 1 cup quick-cooking oats
    • 2 tablespoons brown sugar (add as desired sweetness)
    • 1/2 teaspoon salt
    • 2 eggs
    • 2 teaspoons butter, melted
    • 1/2 teaspoon vanilla extract
    • 2 pcs Ripe banana
    • add flour and baking powder and baking soda if you want it fluffy

    Directions

    1. Crush the banana in a mixing bowl.
    2. Add the milk, oats, sugar, salt, eggs, butter, vanilla altogether and mix well. (add the flour, baking powder and baking soda if using them at this point)
    3. Add more milk and butter as needed while mixing.
    4. *sometimes I like it thick and heavy without flour.
    5. When batter is ready, heat a shallow non-stick pan and start pouring one ladle of batter at a time.
    6. Cook for a few minutes until brown and then flip to cook the other side.
    7. Put on a plate and drizzle with your favorite syrup.
    8. Serve while hot.
